"Belle Forche means bon appetite. It's a Caribbean colloquialism taken from the Spanish and the French - just like our food. French and Spanish aristocrats came to the region along with Canadian fur trappers and Africans, each bringing with them their distinct cultures and culinary traditions. Cajun, the word and the food, comes from the Acadians. The etymology shows us that the word Acadian eventually evolved into the word Cajun after fur trappers and relocated Acadians, fleeing British oppression , came to Louisiana. This word underwent further change and became Creole when it hit the urban population. Criolle includes the Spanish and West Indies influences. Distinctiveness in Criolle food comes not only from the multi ethnic influences, but from the geography in Louisiana as well. Here in Louisiana we have both salt and fresh water, wetlands and dry land; the products and style we employ reflect that diversity. Belle Forche is located on the edge of the historic French Quarter and is the gateway to the Faubourg Marigny on the corner of Decatur and Frenchmen streets. The restuarant is located in a renovated 200 year old historic building with contemporary artisan accents including a wall to wall mermaid mural, custom forged wrougth iron artwork, a mahogany bar and a 600 gallon tropical aquarium. With original wood beams, brick walls and four sets of double bay windows, Belle Forche strives to combine the old and the new in an upscale setting. "
